Either way.... chances are if you've had a garden this year (or are enjoying the harvest from local farmers) you've got some tomatoes.  I'm always looking for new ways to enjoy them... so please share some of your recipes.

Here are a couple of simple ones

Tasty Tomatoes and Basil:
Tomatoes with sliced mozzarella drizzled with olive oil, balsamic vinegar and basil.  Sprinkle some fresh cracked paper and enjoy!

Simple Salsa with Fresh Tomatoes:

- 2 to 3 large tomatoes (peel and seed)
- a garlic clove (peeled)
- chopped green onions
- 4oz can of chopped green chilies
- chopped fresh cilantro
- chopped fresh parsley
- 1-2 tsp olive oil
- 1-2 tsp lime juice
- 1/4 to 1/2 cup of water
- salt & pepper
* add some jalapeno pepper if you like some kick*


Also... we didn't have time to cover this in this weeks segment of  'Get Your Garden On'... but we planted an interesting herb in my window box that might be new to you.  It's a scented geranium and can be used to flavor all sorts of thing, they have a strong scent and can even be used to keep bugs away.  Here's a link to learn more.

Sounds yummy! Glad those tommah-tos came out well for you this season.

[And I'm sure you meant to say "Sprinkle some fresh cracked PEPPER" (or caper?) and not "paper", although this dish might even make paper taste good!] :)

my dog used to eat 'fresh cracked paper' on occasion... but your right- I meant pepper!

Didn't you and your wife have a garden this year?? (or maybe I'm crazy) how'd it come out?

Yep, actually I worked on the garden at my parents' home. Mostly flowers and plants, such as tulips, roses, lillies, daisies, day-flowers, and a futile attempt at echinechea flowers. We were great at growing crabgrass though! :)

The fertilizer you suggested worked wonderfully, almost on a daily basis during those plentiful thunderstorms, I would add a little in the soil and let the rainwater soak it in deep.

But a surprise this year as some green beans grew along a fence, remarkable as we had not planted them in the first place, that was nice treat. It grew pretty well despite little soil and limited sunlight.

I missed a few of your garden segments, do you have Fall crops ready to come out?

PS: Next week is the cruise I'd mentioned, I'm glad Fay was this past week but I'm cautious about it's track in the next few days! Tell me I shouldn't be concerned!

Cindy,
Here's an easy bruschetta recipe I make all the time. It calls for cherry tomatoes, but I'm sure you can use larger ones as well, just cut them smaller. Enjoy

1 Large French Baguette (day old works well)
2 Cloves Minced Garlic
1/4 Cup Olive Oil
15 Cherry Tomatoes, Quartered
3/4 Cup Fresh Mozzarella (cut into small cubes)
3 Tablespoons Chopped Fresh Basil
3/4 Cup Diced Pitted Black Olives or Kalamata Olives
1 1/2 Tablespoons Olive Oil
Salt & Pepper to taste

Preheat Oven to 450,slice bread into small slices (about 1/2 inch thick). Place on a baking sheet. In a small bowl combine olive oil and garlic and microwave for about 30 seconds to blend the flavors. Brush olive oil and garlic mixture on bread slices and heat for about 6-8 minutes, or until bread begins to brown (light toast color). While bread is browning mIx remaining ingredients in a bowl and set aside. When bread is toasted top with tomato mixture and return to the oven for about 4 minutes or until cheese begins to melt. Can be served warm or room temperature.
